Ingredients for Bitter Gourd Gravy: Bitter Gourd-2 Onion-1 Tomato-1 Chilly Powder-1tsp Coriander Powder-1tsp Turmeric Powder-1tsp Sugar-1tsp Tamarind Paste-1/2tsp Mustard-1/2tsp Asafoetida-1Pinch Curry Leaves-Little Salt-ad Needed Oil-3tsp
Ingredients for Grinding:
Grated Coconut-3tbsp Poppy Seed-1tsp
Procedure to make Bitter Gourd Gravy:
1. Cut bitter gourd lengthly and chopped in to small pieces. Chop onion and tomatoes finely. Mix bitter gourd along with salt and soak for half an hour. 2. Make a fine paste of poppy seed and grated coconut along with water. Mix tamarind in water to get tamarind juice. Heat oil in a pan, now drain the bitter gourd and put in pan and saute well. 3. When bitter gourd is half cooked, transfer in to another vessel and keep aside. Put the same pan on flame, heat oil and then add mustard, asafoetida, curry leaves, onion and fry well. when onion turns color, add turmeric powder, tomato and fry finely. Now put all masala ingredients along with salt and fry again. 4. Then add grinded coconut paste, tamarind juice and allow to boil well. When boiling, add fried bitter gourd pieces, sugar and cook for 5 minutes. Now tasty bitter gourd gravy is ready.
